Sweet potato noodles are the best! You can add so many different flavours to them. Make them Italian by pouring pasta sauce on them and adding mushrooms and basil pesto, or make them Asian inspired by stir frying them with soy sauce, garlic and ginger!
This recipe is for the sweet potato noodles only, which take only about 10 minutes from start to finish! They’re super simple!
- Spiralise a long, thin sweet potato using a vegetable spiraliser to make noodles. Hand held spiralisers are under $10. You can purchase them from eBay here.
Or, if you’re serious about your veggie noodles, you can buy larger ones that are easier to use here.
- Add noodles to a sauce pan or wok with crushed garlic or garlic powder. Use a small amount of liquid to lubricate (your choice of things such as: coconut milk, coconut oil, soy/tamari sauce, pasta sauce). At this point you can also add the herbs you choose as well as flavouring such as ginger.
- Stir fry/cook for approximately 8 minutes
- Once cooked add any additional sauce or veggies that you have cooked separately. It’s best to cook other veggies separately to your noodles as the noodles cook faster than most other veggies.
